Bryan and I moved in together roughly 18 months ago, and since then have greatly decreased the amount we eat out, and in the process have really enjoyed learning new recipes and cooking together. It’s hard to manage cooking hearty and healthy meals, while juggling a 40 hour work week, a commute, and training. This year we’re both trying to step up our game when it comes to eating habits, nutrition, and food prep. We would like to share will all of you what we buy at the grocery store for a week, and what we plan to make with it! But first, a little about why food is important to me.
One of the most important goals for 2019 for me is to improve my daily diet and take a more active role in food prep. I tend to stress in the morning if I haven’t eaten breakfast, and don’t have a lunch ready to go out the door. In 2019, I’m planning on having breakfast ready, lunch packed, so I can enjoy my post workout snack and maybe even a second cup of coffee!
Now for the good stuff! Below is our weekly grocery haul. We both give ourselves a pat on the back after shopping, most of what goes in our cart in not highly processed, fresh or frozen produce, and we don’t spend a ton either! Sometimes, during a more exciting week you may even find some sweet treats.

Many of the recipes I’m making this week are from Shalane Flanagan and Elyse Kopecky’s two cookbooks, Run Fast. Eat Slow. and Run Fast. Cook Fast. Eat Slow, as well as Runner’s World, Meals on the Run.
Breakfast/Snack Prep
Run Fast. Eat Slow. “Sweet Potato Breakfast Cookies” – I love these before a workout, or on the bike for a long ride!
Run Fast. Eat Slow. “On-the-Run Frittata Muffins” – I haven’t yet tried this recipe and I’m very excited for a quick bite as I head out the door.
Lunch Prep
Run Fast. Cook Fast. Eat. Slow. “Thai Quinoa Salad” – Are you noticing a pattern here?

Dinner
